Eat Your (Rainbow) Greens: A “Unicorn Grass” Recipe!

Enticing kids of any age to eat leafy green vegetables can sometimes be a mealtime struggle! My four year old has started calling Rainbow Chard "Unicorn Grass" which immediately made it much more exciting than a leafy green, so tonight we made "Unicorn Grass with Pineapple" which went down a treat (grown-ups liked it too!), so I thought I'd share on here. Recipe below! 🌈🦄🌿

 

Sautéed Rainbow Chard with Pineapple


INGREDIENTS

  • Around 200g Rainbow Swiss Chard - chopped into 2-inch pieces
  • 1 clove garlic, peeled and finely diced
  • 2 – 3 tablespoons of olive oil
  • 1/2 cup pineapple chunks
  • 1/2 cup stock (chicken/veg) or water

METHOD

  • Wash chard well
  • In a large frying pan lightly fry garlic then add in the pineapple chunks
  • Sauté for a bit longer and once the pineapple is softening add the chard to the pan & sauté until wilted
  • Add stock to pan (or water if not using stock) then cover and simmer for around 10mins or until chard is tender
  • Remove from heat, season and serve
