Recipe: Greek Salad (Horiatiki)

A classic Greek salad (also known as Greek village salad, or horiatiki) is simple and makes for a great and seasonal summer lunch, whether you’re lingering over it outside with friends, or taking your midday break at work. Cherry tomatoes and cucumber are staples in a Greek salad, and are staples in most of our FruutBoxes. You’ll need to add a red onion to your order and get hold of some Kalamata olives and feta cheese, and then you’re good to go.

METHOD

Take the cherry tomoatoes and cucumber from your FruutBox. Halve the cherry toms, and cut the cucumber into chunks. Then get the red onion that you added to your order (😉), and slice half of it thinly. Put it all in a bowl and combine. Add a decent handful of Kalamata olives (don't forget to remove the stones!) and then break a block of feta cheese into it. If you want to do it the traditional way, serve the feta whole on top. Divide between two plates, drizzle with EV olive oil, a few twists of pepper, and a pinch of fresh or dried oregano. Enjoy sat outside in the sunshine 👌
